Baking in color: Minsk Oblast rolls out sprouted purple wheat bread in 2025

MINSK, 5 January (BelTA) – In 2025, bakeries in Minsk Oblast began producing bread from sprouted purple wheat, BelTA learned from Borisov Bakery.

Last year, one of the company’s farms located in the region planted 20 hectares of spring purple wheat using seeds sourced from Russia’s Omsk Oblast. Experts note that this wheat variety is distinguished not only by its purple grain but also by its high anthocyanin content, which is a natural antioxidant known to benefit human health.

“We decided to introduce purple wheat into bread production at two of our subsidiaries, in Soligorsk and Vileika,” explained Tatiana Verbitskaya, chief technologist at Borisov Bakery. “For the Soligorsk branch, we developed a recipe for ‘Khozhevsky Wholegrain’ bread, which contains 67% sprouted purple wheat. In Vileika, we launched a bread called ‘Dar Zemli’ (Gift of the Land), made with 15% sprouted grain of the same wheat.”

The names for these purple-grain products were created by the company’s own staff. The first batches of purple wheat bread went on sale in December 2025, following an initial presentation and tasting in September at the regional Dazhynki harvest festival in Zaslavl.
